Aloo stuffed kulcha.





Ingredients to make dough :

Maida - 2 cups
Instant dry yeast - 1 tsp
Warm waterwater - 4 tbsp
Baking powder - 1/2 tsp
Sugar - 1 tsp
Salt to taste

Ingredients to make stuffing :

Boiled pealed and
 mashed potatoes - 2 cups
Onion - 1 large fine chops
Chilli powder - 1 tsp
Dhaniya powder - 2 tbsp
Cumin powder - 1/2 tsp
Amchur powder - 1/4 tsp
Chat masala - 1/4 tsp
Butter - 3 tbsp for topping after paratha is prepared
Negllia seeds - 1 tbsp

Preparation :

Take warm water in a bowl....add yeast and sugar.....keep aside for 15 minutes...
Now sieve ...maida,baking powder, saltbin a bowl.....and add the yeast and sugar mixture kept aside.....kneed the dough well to make soft elastic dough..... Make sure the dough you prepare is soft not tough......

When completed kneeding.....cover with a kitchen towel and keep aside for 2-3 hours .....it'll double in size.
Ones the dough has doubled in size its ready to prepare.keep it aside.

Let's prepare the filling......mix all the ingredients for filling in a bowl except butter and negilla seeds...mix well .

Now take dough of one orange size......and spread to 3-4 inch diameter thickness..... Take 2 tbsp of filling .......place exactly in the middle ......cover it completely.........

Now dust with maida ....and roll it on a flat surface with a rolling pin to 7-8 inch diameter.....now apply some water on top.....to say exactly its literally brushing some water.......and sprinkle some negilla seeds....and some fresh coriander.... And press with palm for them to set on prepared kulcha.

Now heat a thava ....put the prepared kulcha on it....leave for 30 seconds.....it'll pop up.....wait till its slightly brown ...turn and cook......now cook similarly the other side.......remove off thava .....top it with 1 tbsp of butter and serve.prepare the remaining dough similarly.
