Basundi



Ingredients :

Milk - 1 ltr
Sugar - 6 tbsp 
Badam , cashew ,pista - all soaked in hot water for 1 hr....and cut to small pieces or you can grate them in fine grater..
Condensed milk - 250 ml

Preparation :

Heat milk in a thick bottom vessel or a thick kadai....Put in a ladle to avoid milk over boiling...

One's it boils slow down the flame and let it boil in slow flame...

We have to wait till the 1 ltr milk reduces to 1/2 ltr.....

So for every 4-5 min....the top layer of milk will form malai.....jus move it to the walls of the vessel... Don't remove from it...

 Doing like this....when the milk is reduced you can find strands of malai in it....now add sugar.....

The sugar will melt and increase in volume...again wait for it to come back to the same volume....

At this stage ad condensed milk....

Remove from flame and add dry fruits...

Chill and serve....

Note : 
Dry fruits grated....gives more taste when compared to finely chopped....
