Preparation :

Boil water ( 400 ml ) and add salt to it ( rock salt ppreferre)

To boiling water add the cleaned cauliflower florets and boil for 2-3 minutes.

Meanwhile heat oil to fry on the other side.

Then remove the cauliflower boiled and  run through a strainer to remove water from cauliflower.

Now once the cauliflower comes to hand friendly temperature..... quickly add to the batter prepared and mix well.

Make sure not to break the florest....since they are half cooked they will tend to break .Mix them tenderly with hands.

Now the oil must have reached the right temperature.....drop in one florest at a time .....around 10-15 Florest can can be fried in a batch.

Do it in two batches.....make sure to drop them one by one .....dont take much time.... finish dropping a batch in less than a minute.

They will tend to stick to each other ...split them with a slotted ladle....and remove from oil once they turn golden brown.

Rest them on a tissue paper.

On the other side heat a kadai and add 3-4 tbsp of oil and heat it up .

Once the first batch is ready.....start to prepare the gravy for Manchurian.

Add Ginger saute well to smell the aroma of ginger......then bring in garlic saute it.....and now add the green chillies and Onions.

Now start to fry the second batch of coated florest.

Now the Onions must have cooked...to this add soya sauce and tomato sauce.....mix well and a pinch of salt.Mix well and leave in low flame for about 1 minute .

Meanwhile remove the second batch from oil and set them aside.By now both the batches are over and are  ready to go with the gravy.

Mix the fried Florest to the gravy and mix well.

Add the fresh coriander and again give a gentle mix.

Now leave this in low flame for 2-3 minutes......

Then remove from the kadai and serve hot with freshly sliced onion rings.

Enjoy this with any soup....its amazing.
