Cauliflower Rice ( eazy )



Ingredients :

Onions - 2 no's finely chopped
Tomato - 2 no's finely chopped
Ginger garlic paste - 1 tsp
Coriander - 1/2 cup finely chopped
Pudhina - 1/2 cup finely chopped
Turmeric powder - 1/2 tbsp
Chilli powder -  1 1/4 tbsp
Dhaniya Powder - 3/4 tbsp
Garam masala - 1 tsp
Pepper powder - 1/2 tbsp
Oil - 4 tbsp
Salt to taste
Cooked rice - 1 bowl

Preparation :

Heat a pan.
Add oil to it.
Then add onions saute them to get transparent ( low flame preferred, saute now and then )
To the cooked onions add Ginger garlic paste and Tomatoes.
Add a pinch of salt and saute them to cook well.
Once they look cooked ( oil will separate) add chopped Coriander and pudhina.
Saute them.
Now add turmeric powder, chilli powder , dhaniya Powder ,garam masala and salt.
To this add 1cup water.
Mix them, once ty boil reduce flame and wait for it reduce to half the volume.
Then add half cooked cauliflower.
Mix well and let oil separate.
Now add cooked rice  , pepper powder and salt for rice.
Mix such that you don't break the rice grains.

Veggies Raita :

Ingredients :

Onion - 1 No's finely chopped
Tomato - 1 No's finely chopped
Green chilli - 1 No's finely chopped
Carrot - 1/2 finel1 grated
Coriander - 1/2 cup Finely chopped
Curd ( fresh ) - 1 cup
Milk - 1/2 cup
Salt to taste

Preparation :

Bring the above Ingredients into a common bowl.
Mix them well to make them look evenly mixed.
To this add curd , salt and milk.
Mix well and serve .

Note :

Cauliflower -

Add cauliflower to boiling water and add salt to water.
Boil it for 2 minutes then strain the water and reserve cauliflower to cook.

Rice -

Seraga samba rice or any long grain rice like basmati rice will taste good.
Add a drop of oil when you cook rice to keep the grains nonsticky.

Raita -

Neve mix curd and keep.
The onions will tend to get soggy and watery.
