Crispy baby potato fries

 Crispy baby potato fries:

Usually, baby potatoes are bagged to a certain weight. So, as you pick them try to pick the medium sized ones from the bag you buy for this fry, as we need to coat it with masala which kids can't stop eating or they will never want to share so medium sized potatoes will enhance the taste. Better to prepare a little more in volume as kids will reduce rice intake and skip to this. In this recipe we will fry it with the skin which will give a crispy middle layer with soft inside along with the lip-smacking masala coated outer layer. On the whole this recipe will be kids all-time favorite and also can be prepared for evening snack. I prepare in a little more volume as my kids would love it for evening snack. Now let's get to the recipe. 😋





Ingredients: ( 4 servings)

Baby potatoes - 24 nos (medium sized)

Garam masala - 1 tsp

Chaat masala - 1/2 tsp

Chili powder - 1 tsp

Turmeric powder - 1/4 tsp

Dhaniya powder - 1 tsp

Pepper powder - 1/tsp

Salt to taste

Oil to fry 

Preparation:   

Boil the potatoes in boiling water with a pinch of salt for 25 to 30 mins or pressure cook it for 3 whistles. 

Now strain the excess water and let it cool down.

Meanwhile let the oil heat up.

Once its completely cooled down smash each of the potato slightly just to open as you seen in the above image.

Do the same for all the potatoes.

See to that it cracks one side or not more that 3 sides. Also, don't flatten them much.

Now fry them in the hot oil until golden brown and do this in batches don't crowd the oil.

As the frying gets over mix all the masala in one bowl to dust the potatoes.

Now take a wide large bowl and drop all the fried potatoes in it.

Add the masala to this and mix well. 

Mix until all the potatoes get evenly coated.

Serve this with any rice. Goes good with sambar rice, rasam rice , curd rice, can also be served with any rice mix variety. 

For sure a kid's favorite recipe. My kids love this.
