Dates sponge cake




Ingredients :

Maida - 1 1/2 cup
Condensed  milk - 1 cup
Sugar powder - 1 cup
Dates syrup homemade - 3 tbsp

Baking soda - 3 /4 tsp
Double acting baking powder - 3/4 tsp

To decorate : (optional)

Chico chips - 1 tbsp
Butterscotch chip - 1 tbsp
Chocolate strands -1 tsp

Preparation :

Take maida ,baking powder & baking soda in a vessel ....sieve through to another vessel......this is to give a even mix of all....

Now take the above mixed all in a wide open vessel....and take a whisk (  I hand whisked them).....add sugar powder, condensed milk, dates syrup.....whisk slowly....... Can take a break in between you whisk......coz it will be pretty thick.....whisk in the same direction.....

If stared clockwise.....go clockwise and complete...... If started anticlockwise.... Go anticlockwise and complete whisking......

Now whisk for 5 solid minutes...... 

Put a cooker with sand  bed for 3/4 inch.... And leave in high flame for 10 minutes.....

One's batter ready....take a aluminum baking vessel....apply butter on the walls......and dust maida.......then pour prepared batter.....and tap the vessel to settle the batter even.....now sprinkle ....choco chips,butterscotch chips & chocolate strands.......

Put a stand on the sand bed......place batter in it....and reduce flame to medium....and cover the cooker.....no whistle....  & ...no gascut.......

Leave for 30 minutes ....don't disturb.....

Open after 30 minutes and prick with clean dry knife to check if the cake is ready.....is the knife comes out clean....your cake is ready.....

Remove vessel with a holder.....run knife through walls of the vessel to separate cake from vessel...... Place a plate on top of the baking vessel......turn it upsidedown. ....your cake will drop out....then turn it right side top.....slice n....whats waiting ?......

Serve it ......yummy cake is ready .....
