Mutton Peratal / Mutton Fry






Ingredients :

Mutton - 1/2 kg
Shallots - 15 sliced
Tomato - 1/2 sliced
Ginger garlic paste - 1tbsp + 1 tbsp
Chilli powder - 3/4 tbsp + 1/4 tsp
Dhaniya powder - 3/4 tbsp
Turmeric powder - 1/4 tbsp + 1/4 tsp
Garam masala - 1/2 tbsp
Pepper powder - 1/2 tbsp
Curry leaves - 15
Coriander leaves - 1/2 cup
Cinnamon - 1/2
Cloves - 2
Black stone flower - 1/2 tsp
Saunf - 1/2 tsp
Oil - 4 tbsp
Salt to taste

Preparation :

Cooking Mutton :

Cook mutton with immersable amount of water with ginger garlic paste  1 tbsp , chilli powder 1/4 tsp , turmeric powder 1/4 tsp , pinch of salt.
Pressure cook for 7 whistle in medium flame.
Then in low flame for 10 minutes .

Heat a pan .
Add oil and once hot add the spices .
Following the aroma add the shallots , tomato , ginger garlic paste , curry leaves and few Coriander leaves ( reserve the rest for the final garnish ).

Cook until oil separates , now to this add Chilli powder , dhaniya Powder , turmeric powder , garam masala , pepper powder and salt.
Mix well.

Now to this add cooked Mutton.
Leave it in slow flame .
Keep mixing it now and then to avoid from catching up the pan .

Once the oil separates transfer to a serving bowl and serve with any rice varity or Chapathi or Naan.
