Arisi vathal ( recipe for beginners)


Ingredients :

For flour

Raw rice - 1/2 kg
( I used  mavu pacharise )
Sago - 125 gms

 Sun dry the above given both for one day at noon...for 2 - 3 hours...and then grind in flour mill nearby...you will be ready with instant vathal flour.....


Note : 
These vathal are to be layed and sun dried only by the month of March......tats perfect with damn hot sun...and not cold....Jan and feb are cold....after march....there will mild wind .....which will cause your vathal to get crunchy with the sand getting deposited on it .
So only march is apt for sun drying these vathal.....
Chennai ladies can do this till April middle.

Preparation :

First grind 3 green chilli + 1/4 tumbler of water.....and filter the juice...and keep aside the green chilli extract.
Then we need 
Asafoetida- 1 tbsp
Jeera - 1 tbsp
Salt to taste



Now you need 1 1/2 tumbler of water..... And mix 1 tumbler of the instant vathal flour we have prepared....mix with out lumps...and keep aside....

Now boil 4 tumblers of  water in a thick bottom vessel ....when it pretty boiling at high point.....add green chilli juice + jeera + asafoetida and  salt.. now let water boil

Now add the water in which we mix the instant vathal flour......mix with a ladle (whisk  preferred) .... Non stop. And cook  till you find it getting thick.....at this stage.....remove from flame and set to cool.

Its better you prepare at night and leave it to cool..... Then lay vathal by morning.

Now how to lay....first take a large tray....for the amount we have prepared.... You may need 4-5 trays of about 2 feet×1 feet length...or circle plates of...1 1/2 feet diameter......

Apply oil (coconut oil preferred) on the tray thoroughly.... All over the plate.....and start to lay...
Take a handful of the batter and start to drop small lumps ( of  each 1/2 the size of amla) place it on the plate and finish of the entire batter this way. 


Then sun dry for that day in separate plates ....dry them by morning 10 to noon 4......never prepare on a gloomy day...... You won't get gud result.....

Prepare only on a perfect sunny day.....if you hav doubt about the climate..... Prepare on the day morning.... By 6-7 so tat there will be time to cool down...

Now after day 1 job...bring home the plates.

Remove the vathal from plate by knife...carefully...

The transfer them to a common large tray and sun dry for a week timing as mentioned early...... And shelf them....you can preserve for  a year....they look like this when they are about to be shelfed



They need maintains.....after they are made...

Yes every month remember to sun dry them at least one's.... So that you hav your hand made vathal at home....

On the day of need ....heat oil and drop like you pop papad.......remove when they are ready....they look like this.,.


There will be left over flour...you can try this again to empty....don't keep it for next summer....it won't stay.....if at all you were in lack of time to lay vathal......sun dry the flour every month twice...to avoid bug formation......

Be well prepared with trays.....oil....time...n checkout climate..... Then its perfect...
