Its a delicious food ......tastes soooo gooood.....and steam cooked food....
Ingredients :
Idly rice - 1cup
Coconut grated - 1 1/2 cup
Mustard - 1/2 tsp
Gram dal - 1 tsp
Asafoetida (hing) - 1/2 tsp (powder)
Dry red chilli - 5 nos
Curry leaves - a hand full
Oil - 4 tsp
Salt - to taste
Method :
Initially soak the idly rice the previous night you want to prepare it .
Grind the soaked rice ( washed and water drained ) and grated coconut and salt .
(This dough has to be cooked immediately and cant be stored for the next day it , if stored will get spoilt )
Heat a kadai with oil , now add mustard let it splatter add gram dal to it and fry it well crisp then asafoetida, dry chilly ( not whole just pluck it into half each) then curry leaves.
Now add the ground paste of rice and salt( we hav added salt when we grind....so this is only for tapering Ingredients) to the kadai and mix well.
See to that the ingredients in the kadai get to a thick dough and it losses all water , only the you can steam them.
Now heat a steamer (idly steamer) with about 5 tumblers of water because you need to steam this for 20 mins.
Make lemon sized balls of the dough in kadai, do not tighten the dough when you make balls of it , it wont get cooked .let the balls be lose packed and place on the steamer plate .
Let the water come to a boiling state , now place the plated with balls in the steamer and cover it with its lid and cook for 20 mins in high flame.
Now after 20 mins put off the flame and remember if your cover of the steamer is of steel it will be hot , do open with help of a kitchen towel.
Your Uppu kozhukattias...... ready serve them hot.......
