Katherikai varuval traditional.....



Very yummy kathrikai varuval....lips smacking....


Ingredient's

Onion - 1 large fine chops
Tomato - 1 well ripe ( Bangalore tomato preferred) fine chops
Garlic - 4 large or small fine chops
Coriander - 1 cup fine chops
Curry leaves - 1/2 cup
Chilli powder - 3/4 tbsp
Dhaniya powder - 1 1/2 tbsp
Turmeric powder - 1/4 tbsp
Oil - 3 tbsp
Bringal - 8 nos ( medium size)
Salt - to taste

Preparation

Lets start with bringal...now cut them each into 4 vertical slots.Put them in boiling water to cook to soft texture.

The most important thing is selecting bringal ....hav a look at the green part of bringal.....pick bringal with fresh green in them ...only then the gravy we prepare will taste good.

Add chilli powder ,dhaniya powder and turmeric powder to boiling cooked bringal..don't add before they cook...keep an eye on the water level ...when its very low remove off the flame.

Now heat a pan..add oil ....when hot ...slow down flame and add onion,tomato ....saute them....so that they get soft and blend texture.

Now put in the garlic..and coriander and curry leaves.

When all in the pan are well soft n blend together.. Add the bringal water to this...add salt and leave in slow flame.

Keep stiring now and then.
The time to stop is...your can see the oil coming out of the recipe.

At this stage remove of flame and serve in a bowl.

Taste good when served hot.

This goes good with just a milky curd rice,sambar rice or rasam rice..... Else just mix plain rice with the bringal gravy and have it it'll taste awesome.
