Ingredients :
Carrot - 250 gms
Sugar - 200 gms
Cashew - 15 no's broken
Cardamom powder - 1 tsp
Ghee - 9 tbsp
Water - 100 ml
Milk - 1 tsp
Preparation :
Wash carrot... Peal the skin....grate it in fine grater and transfer to a cooker vessel...sprinkle water to cook....pressure cook for 3 vissle.
Now take a kadai ( preferable large ,thick and deep....these types are the best to make sweets) add water and sugar to the kadai .....let sugar melt....to form sugar solution.
Add one tsp of milk to sugar solution......this is a process in which the dirt in the sugar solution will come out separately to the top of the kadai....remove carefully..... See to that you don't mix it instead of removing.....remove with a flat spatula.....
No specific consistency required in sugar solution..... Add the cooked carrot......and add 1 tbsp of ghee......now keep stirring in low flame....
Wait till your dessert gets a glassy transparent look.....keep stiring. ..only low flame...... Add 3 tbsp of ghee..... Constant stirring is required.... Or else will get burnt.....
When you find the dessert leave the walls of the vessel..... Add 2 tbsp of ghee and stir....add cardamom in this stage......remove off flame at a jelly consistency..... Be watchful.... Else will get crunchy....
Now heat a kadai... Melt 3 tbsp of ghee......add cashew to golden brown colour......remove and add to halwa.....at this very stage....transfer to a clean sterilized container......this never needs to be refrigerated......can be kept and served for a week.
