Gobi Manchurian




Ingredients :

Cauliflower - 1 large
Onion - 1 1/2 fine slice
Tomato - 1/2 fine slice
Ginger - 1 tbsp
Garlic - 1 tbsp
Coriander leaves - 2 tbsp chopped
Spring onions - 1/2 cup fine chops 
Green chilli - 2 fine chops seeds removed
Soya sauce - 2 tbsp
Tomato sauce - 2 tbsp
Chilli powder - 2 tbsp
Dhaniya powder - 1 tbsp
Turmeric powder - 1/4 tbsp
Oil - 2 cups + 5 tbsp 
Gram dal flour - 3 tbsp
Rice flour - 1 1/2 tbsp
Maida - 3 tbsp
Garam masala - 1 /2 tbsp
Salt to taste

Procedure :


First we need to prepare dry Gobi Manchurian.....

And here goes how...

Just cut into small flowers..... Wash and drop in boiling water for 2 minutes and drain the water....and rinse it immediately in plain water.This boiling water bath is to kill worms in cauliflower which we can't remove since they lay deep into the flower.

Now time to put 2 cups oil in pan....and switch on the flame.....low flame...itl Will get hot mean time we marinate.

Meanwhile  let's prepare batter to marinate....take a wide open vessel....put in gram flour,raw rice flour

Maida,garam masala, chilli powder, salt and add water make smooth batter.....drop the flowers one by one and make each marinate well.

Now check if the oil is hot.....how to check?... Yes here comes the answer.... Drop a very small piece of marinated cauliflower it'll leave bubbles instantly..... Thats the time to start to fry .

As i have added to my other deep fry recipes.......like chepankezhangu fry,baby corn golden finger..... Don't crowd oil....tending to a drop in temperature...... Drop only 7-8 pieces at a time.....keep turning them to note the change in colour..... Ones they turn golden brown.....remove ...transfer to a tissue paper.....


Now comes the actual part.....

Take a kadai...heat 5 tbsp of oil in it.....when well hot add.....garlic and ginger and toss to lill bit roast....then add onions to transparent.... And then add tomato......add soya sauce and tomato sauce...... Mix well....

Toss all toss well.....it'll merge well by then....add fresh coriander 1/2 tbsp....

Then add chilli powder, dhaniya powder and turmeric powder.... And toss well....

Then add the dry Gobi Manchurian.... Toss till mix well..... Leave in slow flame.....add spring onions.....tossing continuously.....

Finally garnish with fresh coriander  and serve hot.

Its a perfect starter.....goes yummy with any pulao....
