Malpua



Ingredients :

For malpua:

Maida / all purpose flour - 400 gms
Condensed milk - 500 gms
Baking powder - 1/2 tsp
Pistachio to garnish
Ghee - 2 cups to fry

For syrup :

Sugar - 1 cup
Water - 1 cup
Saffron strands - 1 pinch
Cardamom powder - 1/2 tsp

Preparation :

Preparation for syrup :

Mix sugar and water and boil it....  Cook for single-thread consistency......

Now remove off flame and add saffron strands and cardamom powder...  And keep aside for later use.  

Preparation for malpua :

Take a large bowl......blend in condensed milk, maida and baking powder to form a smooth batter.......

Meanwhile heat ghee in a deep frying pan to cook malpua....( flat pan prefered)

When pretty hot....pour the batter in to it for about 4 inch diameter.....wait till golden brown  ...then turn to the other side to get the same colour.....

Remove from oil and dip directly into prepared sugar syrup for 3 min .......then remove and set on a sieve for excess syrup to drain......

Now serve hot.....top with pistachio....

Note : 

If interested can serve with rabri....

Rabri is jus heating milk and sugar ....milk 1 liter and sugar 1 cup...boil them in a thick bottom pan....and cook till its 1/4 of the original.......and set in refrigerate to cool.....

Now when you serve malpua's......set them like in above picture......and spread 2 tbsp of rabri on it and top with grated almonds and pistachio and serve.....
