Meeta pani ,kaara pani







Ingredients :

For Meeta paani:

 Ingredients :

Tamarind -  1 small orange size
( to be soaked in water 1 hours preparation)
Jaggery - 1+ 1/2 the size of tamarind
Cardamom - 3 no's jus dash 
Dates - 6 no's ( seeds removed)
Salt a pinch

Preparation :

Boil dates in immerse amount of water for 5 minutes.....let them cook well.....remove from flame and let to cool.....jus smash with hands ....to make them dissolve....then filter and extract juice.....again add some hot water to the left over dates.....smash and again filter....double filtering is enough....keep aside the dates extract.

Now make tamarind extract.... You all must be familiar with the preparation.... Yet I'll tell you...its the same of dates extract preperae......filter only once.

Now boil tamarind extract and add jaggery to it and add cardamom.... Let the amount reduce to 1/2 of it...now add dates extract and a pinch of salt.....again let it reduce to half......

Now transfer to a clean container and this can be fridged for maximum one month...I use this instead of an market available sauce....

Kaara pani :

Ingredients:

Pudhina - 1 cup cleaned and washed
Coriander - 1 cup cleaned and washed
Green chilli - 2 no's
Ginger - 1 inch pealed
Amchur powder - 1/2 tsp
Chat masala - 1/2 tsp
Salt to taste

Preparation :

Add all the above ingredients to food processor and grond with 1/2 cup water.....now filter and keep the extract...

Now both Meeta pani and kaara pani ready to be served with any kinds chat or samosa
