For marinating chicken :
Chicken - 1 kg
Curd - 250 gms
Chilli powder - 2 tbsp
Dhaniya powder -2 1/2 tbsp
Turmeric powder -1/2 tbsp
Garam masala - 1/2 tbsp
Ginger garlic paste - 2 tbsp
Pudhina - 1 cup ( cleaned and chopped )
Coriander - 1 cup ( cleaned and chopped )
Salt required amount for chicken
Curd - 250 gms

Pudhina - 1 cup ( cleaned and chopped )

Take a large bowl add in chicken ( washed only once ) to this add all the above Ingredients and mix well and fridge it for 1-2 hours.
For cooking rice :
Rice - 200 gms
Water - 6 to 7 tumblers
Chilli powder - 1/2 tsp
Pepper powder - 1/2 tsp
Dhaniya powder - 3/4 tbsp
Garam masala - 1/2 tsp
Turmeric powder - 1/4 tsp
Bay leaf - 1/2
Salt for rice
For Briyani:
Onions - 3 no's large
( finely sliced & fry them to golden brown)
Chilli powder - 1 tbsp
Dhaniya powder - 2 tbsp
Turmeric powder - 1/4 tbsp
Garam masala - 1 tbsp
Ginger garlic paste - 1 tbsp
Bay leaf - 2
Water - 6 to 7 tumblers
Chilli powder - 1/2 tsp
Pepper powder - 1/2 tsp
Dhaniya powder - 3/4 tbsp
Garam masala - 1/2 tsp
Turmeric powder - 1/4 tsp
Bay leaf - 1/2
Salt for rice
For Briyani:
Onions - 3 no's large
( finely sliced & fry them to golden brown)
Chilli powder - 1 tbsp
Dhaniya powder - 2 tbsp
Turmeric powder - 1/4 tbsp
Garam masala - 1 tbsp
Ginger garlic paste - 1 tbsp
Bay leaf - 2
Black stone flower - 1 tbsp
Cloves - 4
Cardamon - 2
Cinnamon - 2 inch
Star anise - 1
Oil - 3 tbsp
Ghee - 3 tbsp
Coriander - 1 cup
Pudhina - 1 cup
Cloves - 4
Cardamon - 2
Cinnamon - 2 inch
Star anise - 1
Oil - 3 tbsp
Ghee - 3 tbsp
Coriander - 1 cup
Pudhina - 1 cup
Preparation :
Boil water ,to boiling water add 1 tbsp of oil.Now add washed ( once ) rice to it ,cook for 7-8 minutes ,by then add in all mentioned masala powders ( for cooking rice ) boil it for 3 minutes.Then drain away water and set aside,for all water to drain.
Now take a thick bottom vessel.Heat it and add oil and ghee, wait for ghee to melt and once you smell the aroma of ghee add in all the mentioned spices.Saute to smell the flavour.
Meanwhile fry the onion slice's and keep aside for later use.
To this add chilli powder, dhaniya powder, turmeric powder, garam masala , Ginger garlic paste ( pick measurements mentioned For Briyani).Add salt for rice to this and marinated chicken.
Mix well and cover it for 10 minutes in low flame.
Water not to be added,chicken while cooking will leave water.This is more then enough for the remaining procedure.
Now again mix well and add cooked rice to it add only 1/2 of cooked rice.
On top of this layer sprinkle coriander chops and pudhina chops.
Now put another layer of rice on it .On this layer again sprinkle coriander chops and pudhina chops.
On top of all this now spread fried onions.Cover with perfect tight lid.If you don't have a tight lid ,cover it and place some weight on it .Be careful the weight doesn't fall of in the middle of the procedure.
Put a thava on high flame and place the vessel prepared on it and leave it for 40 - 45 minutes on medium flame.
Open it and mix gently, without breaking the rice.
Serve hot, with onion ritha or any chicken gravy .
